108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The dishwasher sanitizer container is empty. No detectable sanitizer in the rinse cycle. The dishwasher log incorrectly indicates that the sanitizer levels were tested today and found at the appropriate concentration.
Corrective Action: This violation corrected at the time of this inspection. Please ensure that the dishwasher sanitizer concentration is tested using a test strip before recording it on the dishwasher log.
113   Repeat Improper Sanitary Facilities
Observation: No paper towel available on the bar hand station.
Corrective Action: A method of drying hands that use single use products must be provided on the bar hand station.
116   Improper Construction / Maintenance of Establishment
Observation: The shelves in the upright cooler are rusted and are in need of repainting/refinishing.
Corrective Action: Please replace/repaint the shelves to make them easily cleanable. Target completion 6 months from the date of this inspection.

3. The hand washing stations in the kitchen and the sushi bar is equipped with soap and paper towel.

6. All the fridges have their own thermometer in them.
7. Sanitizer available to sanitize the food contact surfaces.
