Observation: a)Chemical containers stored with food items. b) Food stored on the floor in the dry storage area.
Corrective Action: a)A separate cabinet needed to store the chemicals.b) All food must be stored at least 6 inches above the floor.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: a) The cooler with the glass door has rusted shelves. b) The surfaces on the most of the shelves in the kitchen has deteriorated to become porous, absorbent, non-smooth and difficult to clean.c) The wall behind the chest freezer by the janitorial sink has a hole in it. d) The floor and the shelves in the dry storage room are dirty. e) The lids on the chest freezers are cracked and have exposed insulation in them.
Corrective Action: The following time lines are being agreed upon by the operator to correct the above listed structural items: 1) 2 months from the date of this inspection to change/ repair the freezer doors. 2) Clean the storage room and get everything off the floor and away front any chemicals in 2 weeks from the date of this inspection. A weekly cleaning schedule for this area thereafter. 3) New shelves for the cooler- 1 month from the date of this inspection. 4) Replace all the existing rough shelves with the smooth non porous and easily cleanable material and covering the hole in the wall. Target completion 30 April,2010.

Observation: The test strips are not provided to measure the quat sanitizer concentration. The chlorine test strips were available at the time of this inspection.
Corrective Action: The test strips must be provided. Target completion- 2 weeks from the date of this inspection.

Comments:

Other items observed at the time of this inspection:
1. The wiping clothes are being stored in the sanitizer bucket with 200 ppm quat solution.
2. The cleaning and sanitizing procedures for the cutting table/boards were discussed.
3. Some spray bottles have sanitizer in it but they are not properly labelled. All the spray bottles must be properly labelled.
