Comments:

Proposed opening time is today, December 18th, 2009. Prior to commencing any food service, all kitchen equipment must be operating and all hot/cold holding units must be meeting regulatory temperature requirements. Also, all construction equipment must be removed from kitchen and food storage areas and all surfaces must be cleaned and sanitized.

A second visit will be conducted this afternoon to verify the above and to assess if an operating permit can be issued.

Additional items that must be completed include:
1. Install a paper towel dispenser at service station hand sink.
2. Install a panel on the wall next to the dishwasher.
3. All ceiling tiles must be in place.
4. All exposed concrete must be sealed/re-finished to create surfaces that are smooth and can be easily cleaned.
5. The mop sink must be sealed to the wall.
6. All door frames must be sealed.
7. All walls must be sealed to the floor.
8. A light cover is required outside the walk-in cooler.
9. Coke racks are needed for fountain syrup.
10. Storage shelf next to the walk-in cooler must be 6 inches off the floor.
11. All hand sinks require back splashes.
12. A splash guard or physical separation is required between the hand sink and the dry storage food racks.
13. The exposed bare wood under the bar must be sealed.
14. A back splash is required behind the bar sink.
15. The ice machine lid needs to be cleaned.
