A summary of the violations found during the inspection are listed below.

402  Critical Food is protected from contamination (Sec 12(b))
Observation: 1. Drink containers are stored on top of drink ice. 2. Some raw cryo vac steaks were stored on top on an insert used for soup in the upright freezer.
Corrective Action: 1. Do not store containers on/in the ice storage sink for any ice meant to be used in drinks. 2. All raw foods should be stored below/separate from ready to eat foods.
503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: 1. No light covers for the lights in the kitchen. 2. The inside of the drink dispenser gun is dirty. 3. There is still carpet in the storage room. 4. The space behind the boxes of potatoes requires cleaning.
Corrective Action: 1. Provide light covers or light sleeves for the fluorescent lights in the kitchen. 2. Clean the inside of the drink dispenser gun regularly. 3. Clean this area and incorporate it into a weekly cleaning plan. 4. Remove the carpet in the storage room and replace it with a smooth, easily cleanable surface.
504  Critical Equipment/utensils/food contact surfaces are operated in a safe/sanitary manner (Sec 16(c))
Observation: 1. The dishwasher was not dispensing sanitizer at the time of inspection. The dishwasher sanitizer lines were loose and contained air bubbles which had to be adjusted and the lines primed for the dishwasher to work properly.
Corrective Action: 1. Ensure that the dishwasher is fully stocked and checked for proper operation using chemical test strips at the beginning of each day.

Comments:

Premises is otherwise generally well maintained. All protective temperatures meet regulatory requirements at time of inspection. Two food samples were taken this date for a routine food quality check - samples included hollandaise sauce and potatoes.
