Observation: The line cooler of the fridge opposite the stove/fryer was noted with potentially hazardous food stored at +15C.
Corrective Action: Potentially hazardous food should not be stored within the line coolers over night. This should now be repaired.

Observation: The service fridge for front of house was noted at +7C.
Corrective Action: This should now be repaired.

Observation: Dairy food products, which were understood to have been delivered 15 minutes prior to the inspection were noted at +17C.
Corrective Action: Food temperatures on delivery should be monitored and recorded in line with good HACCP practices and discarded where necessary and should be placed within a temperature controlled environment +4C(min) immediately upon delivery.

Observation: Spray bottles of sanitizer for cleaning food contact surfaces after use were empty and not labelled.
Corrective Action: A readily supply of sanitizer for use in line with the sanitation plan should be available for cleaning purposes at all times.

Observation: Day/date labelling of potentially hazardous food products was not consistently being carried out.
Corrective Action: For food stock control and food status awareness a system of control should be provided and used consistently.

Corrective Action: Food should be stored off of the floor to prevent risk of cross contamination to food contact surfaces.

Corrective Action: The food slicer should now and routinely be thoroughly cleaned after each period of use.

Corrective Action: The ice sink should be thoroughly cleaned and sanitized after each period of use.

Corrective Action: Liquid soap for hand washing should be provided at times.

Observation: The liquid soap dispenser over the sink adjacent the walk-in cooler was empty and difficult to reach.
Corrective Action: This should be relocated to a more easily reached position and routinely replenished.

Corrective Action: This should now be scraped back and repainted/sealed leaving a smooth, impermeable and cleanable surface.

Corrective Action: This should now be replaced.

Corrective Action: The following door seals should now be replaced; dessert fridge, L/H salad fridge, fridge adjacent stove, fridge opposite stove, R/H drawer of drawer fridge opposite stove.

Observation: Three handles to the reach-in fridges, line coolers and drawer fridges have been repaired using adhesive tape.
Corrective Action: These cannot be cleaned efficiently and should now be replaced.
