Observation: Some enhanced cleaning is required behind and underneath equipement.
Corrective Action: Focus on behind and underneath the dough mixer and behind and underneath the counters and diplay coolers. Reinspection for this item on September 30th at 11am.

Observation: The white trays used to store pizza were not cleaned properly and contain old food particles that may fall down into the uncooked pizza on the tray below.
Corrective Action: Ensure that all the white pizza trays are regularly cleaned and sanitized at least once daily. A suggestion to make the cleaning easier would be to provide durable hard trays that can be put in the dishwasher for quick cleaning, otherwise please ensure that the trays are washed in the sinks using soap and an approved sanitizer. Reinspection for this item to be conducted on September 30th at 11am.

Comments:

All protective temperatures meet regulatory requirements at time of inspection. Dishwasher reaches 71C at the dish as required. Premises is otherwise generally well maintained.

Reminder to staff: Please ensure that all donair meat is placed in the pizza oven for a final cook step after shaving off of the skewer as per your Food Safety Plan.
