Corrective Action: Maintain records for critical cooking time and temperature for sous vide cooking.

Observation: The high temperature dishwasher is not reaching 71 degree Celsius on the dishes.
Corrective Action: High temperature dishwasher must reach 71 degree Celsius on the dishes. Please repair/service the dishwasher as soon as possible, and in the meantime manually sanitize the dishes after running through the dishwasher.

Observation: Mechanical glass washer on the front bar is not providing any detectable sanitizer in the rinse cycle.
Corrective Action: Repair the mechanical glass washer in the front bar as soon as possible. Do not use this glass washer until it is repaired.

- Foodsafe certified food handlers available.
- No signs of any pest infestation.
- 200 ppm quat sanitizer available from the sanitizer dispenser.
- General cleanliness is satisfactory.
