Observation: No mop sink available.
Corrective Action: A mop sink must be provided to fill and drain the mop bucket. Target completion date 2 months from the date of this inspection.

Observation: The condensate from the walk in cooler being drained into the 2 compartment sink.
Corrective Action: The drainage pipes from the walk in cooler and hot water tank to be drained away from the 2 compartment sink. Target completion date 1 month from the date of this inspection.

Observation: No paper towel dispenser available on the hand wash station. A paper towel roll is available.
Corrective Action: A paper towel dispenser should be installed to avoid contamination of paper towel roll as a result of direct handling. Target completion date 1 month from the date of this inspection.

Observation: Sanitizer spray bottle is not labelled.
Corrective Action: All the spray bottles must be labelled.
121  Critical Repeat Inadequate food safety training - staff
Observation: As per information provided by the operator, only the manager has the Food Safe Level 1 training. No back up food safe certified staff available.
Corrective Action: There must be at least one person with Food Safe level 1 training available on site all the time. The operator to train one back up person in Food Safe Level 1. Target completion date 1 month from the date of this inspection.

Comments:

This follow up inspection was done to discuss the target completion dates for some of the items on the 2nd May, 2011 inspection report.
The requirement for the mop sink was discussed. The operator to install a mop sink within 2 months from the date of this inspection.
At the time of this inspection a new line cooler was being installed in the kitchen.
