- Sanitation logs and temperature logs in place = good.
- Clean, wiping cloths stored in sanitizing solution = good.
- Operators are FoodSafe trained.
- Vehicle approved for catering and special events.
- All food preparation, processing, cooking and packaging must take place within/on the mobile food cart.
- No aspect of the food operation may take place while vehicle is in motion.
