Observation: The drawers for cooler #12827 do not close properly. Unit was not being used for food storage at time of inspection but staff indicated it was used during dinner service. Problems with temperature control of this unit was noted on October 2010 inspection report and the last follow-up in December 2010 was that a work order had been issued to repair the drawers.
Corrective Action: Drawers must be repaired so they close properly. Unit should not be used for food storage in the mean time as temperature control will likely be impossible with drawers in present condition.

Observation: A build-up of food debris was noted under the coffee station.
Corrective Action: This was promptly attended to during inspection.

Comments:

General cleaning and sanitation of this area was good. All refrigeration units were meeting regulatory requirements (with exception of unit 12827 see above). Thermometers were noted in reach-in coolers and temperature logs are being maintained twice per day. Hot holding breakfast items noted at >60C. Spray sanitizer bottles were noted throughout the area. Ventilation system will be due for servicing this month. Food storage was acceptable - all foods covered and dated. Hand washing stations equipped with liquid soap and paper towel. There were no signs of pests.
