Follow up inspection. Discussed the results of this inspection with the restaurant manager Paul.
As per information provided by the manager, the bar glass washer has now been repaired. The operator now has iodine test strips available. However, the iodine concentration in the rinse cycle measured approximately 5 ppm using FAS-DPD test kit. The attempts to turn up the iodine were not successful. It appears that the glass washer sanitizer calibration system is not responding.
Further repair of the glass washer is required.
The operator is also advised to get a titration based test kit for an accurate monitoring for the iodine concentrations.
The operator to continue using the kitchen dishwasher for the glass ware until the bar glass washer is able to provide 12.5 ppm iodine in the rinse cycle.
