108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Wiping clothes are not being stored in sanitizer solution. Sanitizer spray bottles does not have any detectable sanitizing solution in it.
Corrective Action: Store wiping clothes in 100ppm bleach/200ppm quartz. Make sure to have sanitizer test strips to measure the concentration of sanitizer.
110   Food Not Protected - General
Observation: 1)Thermometers are not available in the front preparation table fridge and the drinks fridge. 2)At the time of this inspection there were left over pizza slices being cooled in the front drink cooler. Four pizza slices were observed wrapped together in a polythene sheet. These slices are sold on a special deal. Please be advised that this method of cooling down the pizza slices may not be adequate to achieve the required cooling rates.
Corrective Action: 1)Provide accurate thermometers in these units. 2) Cool down the left over pizza in a tray with no more than one slice stacked to ensure that the safe cooling rates are being achieved. If you wish to use any alternate method for any operational reasons, verify that the pizza slices are being cooled down within 4 hrs from 20 degree Celsius to 4 degree Celsius.

Comments:

Temperature records are being maintained and are meeting the health requirements. Hand washing facility is equipped with the soap and paper towel. Paper towel dispenser is currently not in use. Recommend using the dispenser instead of leaving the towel rolls on the table.
On the temperature record sheets some employees are using the Celsius scale and others are using the Fahrenheit scale. Please use a single unit to avoid any confusion.
