A summary of the violations found during the inspection are listed below.

503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The condenser of the walk in cooler accumulates a significant amount of condensation, particularly on hot days. The condensation drips down onto the food.
Corrective Action: Ensure that all food in the cooler is properly sealed so that no dripping water contacts the food. As a long term solution, consider installing a plastic (or other insulating material) drip tray below the condensation area to catch all water from the condenser. In the interim, ensure all staff are aware of the issue and organise the cooler appropriately.
706   Operator has written procedures for safe and sanitary operation (Sec 24 (1))
Observation: The dishwasher sanitizer line was kinked at the time of inspection so that sanitizer was not dispensed into the machine during the final cycle.
Corrective Action: Corrected at time of inspection. Provide a written start-up procedure for staff responsible for dishwashing that includes ensuring that all chemical buckets are full and that all chemicals are being properly drawn through the lines onto the dishes. Provide dishwasher test strips. Ensure all staff follow this procedure each morning at the beginning of shift.
803   Premises is free of conditions which lead to harboring/breeding of pests (Sec 26(b)
Observation: Some fruit flies noted in the premises next to the draft lines and in the upstairs bar.
Corrective Action: Implement a program of pest control that includes a nightly shut down procedure at the bar involving complete cleaning and sanitizing of the bar area and draft lines, treating all bar drains with a quat sanitizer or equivalent, and ensuring that all drains are plugged at the end of the night. Also recommend installing fans in the problem areas to prevent attraction of pests. Bar areas should also be regulalry cleaned throughout the day.

Comments:

Premises is otherwise generally clean and well maintained. All protective temperatures meet regulatory requirements at time of inspection. Temperature logs were available on site at time of inspection.
