Comments:

Follow-up inspection conducted this date. Temperature logs are now regularly completed for the cold and hot holding inserts.

A written food safety plan must be submitted for the sour cream and other potato toppings that describes how the toppings are used in service and how they are kept safe from bacterial growth through temperature/time controls.

Recommend using a common temperature log form to incorporate all of the hot and cold holding in the premises. Operator sent temperature log templates by email.

The line cooler next to the deep fryer still requires some modifications to ensure that insert temperatures are 4 C or below. Temperatures of inserts are satisfactory at time of inspection but a heat lamp interferes with the cooling of the inserts and the compressor may not be strong enough to overcome the radiant heat above.

A follow-up inspection will be conducted during the evening in 2 weeks to test the temperature of the inserts during peak periods of use.
