Observation: In general the walls and floors of the garage kitchen are not made of appropriate surfacing to be easily maintained or cleaned.
Corrective Action: A plan should be developed that will address resurfacing the walls and floor to make them more compliant with restaurant standards: (smooth, non-porous, easily cleanable). Operator confirmed that some work is scheduled for this shoulder season. Ensure that any new material installed meets the above standards. Also, if there will be changes to the types of equipment please notify the health department prior to making any changes.
Observation: There are several potential entrance points where pests could gain access to the garage kitchen area.
Corrective Action: General pest proofing was discussed during today's inspection including plans to improve pest exclusion of affected areas in this upcoming shoulder season. The area that appears to need the most work is where the floor meets the wall at the left front corner of the kitchen (when going down the stairs into the garage kitchen).
