Observation: Some of the ceiling tiles have holes.
Corrective Action: All ceiling tiles that are damaged must now be replaced.

Observation: Many of the tiles on walls are chipped or cracked.
Corrective Action: These should now be replaced. All surfaces in kitchens must be smooth, impermeable and easy to clean.

Comments:

Sanitation and general cleanliness is good.
All temperatures are monitored and recorded daily - good.
The dishwasher was achieving an adequate sanitization temperature - good.
Sanitizer bottles were located throughout the kitchen - good.
Hand wash stations were equipped with liquid soap and paper towel.
Food storage areas in walk-in coolers was excellent - all foods were off the floor, covered and dated.
Food handling was observed at time of inspection - no concerns at this time.
Breakfast buffet service was just ending when inspection began. Foods on buffet are set out in small portions to ensure adequate temperatures are maintained - all leftovers from buffet are discarded after service.
