116 | Repeat Improper Construction / Maintenance of Establishment Observation: Some of the shelves in the bar cooler are constructed of unfinished wood that absorbs moisture and cannot be easily cleaned. Corrective Action: These shelves must be replaced with shelves that are non-porous and can be easily cleaned (wire racks or wood treated with a proper seal would be acceptable). Until shelves are replaced, glassware must be stored upright, not inverted, so as to not potentially contaminate the rims. |
Comments:
The area behind the bar was extremely clean, especially under the bar counter. Outstanding job in this area.
General Observations:
1. Glasswasher iodine concentration tested 12.5ppm.
2. Spray bottles of sanitizing solution on site.
3. Soap dispenser on site for hand washing, paper towel dispenser is required.
