Comments:

Opening inspection for this facility after change of ownership. Discussed the results of this inspection with Ian Lowe, General Manager.

The following items are in compliance:

- An exclusive hand sink has been provided in the kitchen.
- The new dishwasher is providing >50 ppm chlorine in the rinse cycle.
- The bar glass washer is providing >12.5 ppm iodine in the rinse cycle.
- Shift supervisors are food safe certified.
- Written food safety plan and sanitation plans developed. These plans reviewed at the time of this inspection and found acceptable.
- No signs for pest infestation.
- Permit application has been submitted.
- A mop sink is available in the building.

Health approval is granted for this facility provided that following items are corrected before opening the restaurant for food service:

· Ensure surface under rack beside dishwasher is refinished/tiles and can be reached to keep clean
· Grout installed to the right of the dishwasher.
· Repair shelf near to prep sink and small ledge immediately to the left of the sink so that they are a cleanable surface
· Repair ceiling in the walk-in cooler
· Ensure that the area behind the ice machine is a cleanable surface where tiles are currently missing.

In addition to above, the operator must make an acceptable mop bucket dumping management plan so that mop bucket is always dumped in the mop sink in the staff change room not in the sinks in the kitchen.
