Observation: Knives in the bar are washed but not sanitized.
Corrective Action: Ensure that all knives are properly washed and sanitized.
113   Improper Sanitary Facilities
Observation: There is no soap or paper towel at the handsink in the bar.
Corrective Action: Soap and paper towel must be supplied.
116   Improper Construction / Maintenance of Establishment
Observation: There is no cover on the light bulb in the walk-in cooler.
Corrective Action: A light cover is required.
122  Critical Inadequate Food Safety Plan
Observation: A Food Safety Plan has not been completed and approved for this facility.
Corrective Action: A Food Safety Plan must be submitted by January 11/08.

110 - food on the buffet is now being discarded at the end of the service period.
110 - dried goods area has been cleaned up; bins for the open bags are on order.
116 - ceiling is still in need of repair - ceiling must be of a cleanable, non-porous surface, must be completed by Feb. 15/08.
