205  Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Display cooler in corner of the room beside kitchen containing sandwiches with deli meat, and foods with dairy product was measured at 10-11 C during inspection.
Corrective Action: Repair, adjust, or replace the display cooler to maintain 4 C. Any potentially hazardous foods prepared that are intended for the display cooler are to be stored inside of the working standing fridge until a working display cooler is available.
311   Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Uncovered, non-shatterproof lights installed inside of the dry storage room. Light fixtures should be shatterproof or covered to prevent physical contamination of foods in the event of damage to the light.
Corrective Action: Install a cover or shatterproof lighting for the dry storage area.
