Observation: Generator which powers refrigeration units is turned off for 6 hours over night.
Corrective Action: Continuous mechanical refrigeration is required when potentially hazardous goods are being stored in the refrigerator. Refrigeration temperatures must be maintained at 4C or less at all times. If alternative methods are proposed, product safety and adequate temperature maintenance must be demonstrated.

Observation: Frozen pork chops observed improperly thawing on the counter in ambient room temperature. Surface temperature of pork chops was still less than 0C at the time of inspection.
Corrective Action: Use proper thawing practices only. This includes, thawing in the refrigerator, under cold running water, or in the microwave (before immediate use). Alternatively, you may cook from frozen. Pork chops were transferred to a working refrigerator at the time of inspection.
