A summary of the violations found during the inspection are listed below.

302  Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Chlorine for dishwasher was old and had lost potency so when diluted in the dishwasher the concentration was less than 10 ppm. Household bleach being used for now.
Corrective Action: Ensure new chlorine is purchased and that the concentration is tested daily.

Observation: Sanitizer concentrations are monitored and recorded daily, however, the wrong test strips were being used and the sanitizer concentration in the dishwasher was less than 10 ppm. The recordings from the previous three days said it was 100 ppm.
Corrective Action: Ensure all staff know how to conduct the chlorine test and how to properly read the test strips.
