Observation: Water being used is not from an approved source. Water being trucked from creek and used for washing dishes and other food preparation related activities.
Corrective Action: Water to be boiled prior to use. Constructing and/or connection to a permitted water source is required immediately. Bottle water will be used in the interim.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Dishes not being sanitized. Cleaned dishes showing food debris.
Corrective Action: Re-wash and sanitize "all" dishes prior to use. 3 sinks method explained. Immediate review and training on the submitted food safety + sanitation plans is required immediately.

Observation: Facility not in good sanitary condition. Food contact surfaces not being cleaned or sanitized properly, utensil holders showing debris, and floors did not appear to have been cleaned recently.
Corrective Action: Ensure that all items related to food operation are cleaned + sanitized as per steps described in the submitted sanitation plan.
