Observation: Chopper was found improperly stored.
Corrective Action: Store utensils in a washable holder.

Observation: Cases of canned food observed in the original shipping container in the dry storage area.
Corrective Action: Unpack cardboard boxes where possible and remove from the food premise as soon as possible after deliveries to prevent infestations.

Observation: 1. Food debris observed in the walk-in freezer #6. 2. The proofer door was observed encrusted with dough.
Corrective Action: 1. Increase the cleaning of the freezer. Adjust the sanitation plan to reflect this change. 2. Increase the cleaning of the proofer. Adjust the written sanitation plan to reflect this change.
