Corrective Action: Potentially hazardous foods (PHF) must be stored not more than 4 degrees C. Owner increased the cooling setting at the time of inspection. Monitor the temperature and ensure the thermometer in the cooler is accurate. Transfer the PHF into another cooler that can maintain proper temperature and/or repair the cooler if it cannot maintain proper temperature. |
110 | Food Not Protected - General Observation: Walk-in freezer, ice was found on a tray of perogies and other bags of food. The ice was formed from effluent water dripping from the cooling fan unit. Corrective Action: Chef and owner stated that food covered with the effluent water/ice will be discarded. Please discard any food that is contaminted with effluent water/ice immediately. Re-arrange the storage of food. Food is to be contained and stored in a manner that is protected from contamination. |
