Observation: Non-food grade bins still being used.
Corrective Action: Manager will order food grade liner bags today for grocery order this week. Bags to be in use by November 19, 2010.

Observation: Potato slicer is filthy.
Corrective Action: Ensure that this is cleaned & sanitized immediately to prevent cross-contamination. Ensure that all utensils & equipment are maintained in a clean & sanitary manner.

Observation: Baseboarding that has been put up still not finished, water-damaged wall in dry storage room not finished, flooring still not repaired in areas of the dry storage room, baking area, and walk-in cooler. All of these items were required to have been addressed by this time.
Corrective Action: Correct all items. Timelines will be set out in a letter to be sent out in the next week.

Observation: Duct tape used to repair back chest freezer. Two other chest freezer lids are cracked with insultation exposed, not properly sealing.
Corrective Action: This is not an acceptable means of repair. Ensure they are repaired properly to be smooth, easily cleanable, and non-absorbant.

Corrective Action: Written food safety plan given to Pamela today. Will review and provide comments.
