Observation: Work on phasing out non-food grade bins or use food grade liners to be done over the next two months.
Corrective Action: Continue phase-out.
112   Poor Sanitary Design, Construction, Installation of Equipment & Utensils
Observation: Knives stored between the counter & prep cooler. This is not sanitary as knives are easily contaminated.
Corrective Action: Immediately begin storing in such a manner as to prevent contamination.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: Many structural repairs addressed. Painting done in many areas. Baseboarding put up, still needs painting or finishing. Water damaged ceiling tiles repaired/replaced. Water damaged/stained back wall of the storage room still requires repairs.
Corrective Action: Continue to work on the painting, flooring, light covers, and general deep cleaning.

Observation: Painting of the walk-in cooler to be done in the next few months to ensure all food contact/storage surfaces are smooth/easily cleanable & impervious to moisture.
