Observation: Cooling/storing batches of foods in deep containers, this prevents effective quick cooling of foods.

Observation: Storing spoons in bowls of food items in the walk in cooler.
Corrective Action: Obtain a fresh utensil each time.

Observation: Using spray foam to seal between the wall and floor. This is not adequate form of finishing to prevent rodent/pest entry.
Corrective Action: Hole under the front service area sink needs to be filled using a durable product (such as wood or metal).

Observation: Front service area water damaged ceiling tiles in dry store room.
Corrective Action: Replace immediately.

Observation: Many structural concerns including missing light covers in kitchen and storage room areas, missing or broken baseboards throughout. Under equipment and hard to reach areas including inside of the ice machine area very dirty and require much more attention.
Corrective Action: Floors in various areas of kitchen, store room areas and walk in cooler require deep cleaning and repainting to be smooth, easily cleanable and impervious to moisture.
