Corrective Action: Ensure that prepared sandwiches are properly dated, labelled by their common name and allergen signage is posted.

Observation: More than four potentially hazardous foods taken out of their original container and stored in the walk-in cooler observed without date.
Corrective Action: Ensure that all potentially hazardous foods taken out of their original packaging are properly dated with their original best before date and original dates are never to be extended.

Observation: Uncovered employee drinks observed stored directly on prep counter.
Corrective Action: Ensure that employee drinks are stored at a designated area away from food and food contact packaging to prevent potential contamination.

Observation: Boxes of food observed stored directly on the floor in the walk-in cooler.and freezer.
Corrective Action: Ensure that all food and food contact packaging are properly stored at least six inches off the floor. This facilitates cleaning, monitoring of pest activity and prevention of food contamination from spill.

Observation: Containers of shredded cheese observed stored uncovered in the walk-in cooler.
Corrective Action: Ensure that all food stored in the walk-in cooler are properly covered to prevent contamination.

Observation: Long-standing debris observed in the nozzle of coffee dispensers.

Corrective Action: Ensure that in-use ice cream scoop is held under cold running water or the water in which scoop is held is changed every two hours.

Observation: The push block of tomato dicer observed severely damaged with missing plastic pieces. Plastic pieces could get into food and result in contamination.
Corrective Action: Ensure that all food handling equipment and utensils are smooth, in good condition and easily cleanable to prevent contamination.

Observation: No paper towel observed at handwashing sink by the mechanical dish washer.
Corrective Action: Ensure that the handwashing sinks are properly supplied with hot and cold running water, paper towel and in a dispenser.
