205  Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: A 1 litre carton of cream was being left out during meal times. It was stood on top of a cold table but this was not sufficient to keep it a temperature that would prevent the growth of pathogens (4°C or less).
Corrective Action: Either store the cream in a refrigerator or leave smaller quantities out and discard any leftover cream after 4 hours.
