Observation: Walk-in refridgeration unit was missing an emergency release button.
Corrective Action: Ensure that the button is repaired or a suitable alternative method to open the door is provided.

Observation: The back kitchen was in the process of being dismantled and was not being used for food preperation. The front area where food preperation is taking place has a tiled area and a carpeted area. Carpets are capable of catching small crumbs and holding onto moisture making them a difficult to clean surface.
Corrective Action: Ensure that all food preparation takes place along the tiled area instead of the carpeted area.

Observation: ECOLAB Peroxide Multi Surface Cleaner and Disinfectant was used throughout the premise on both food and non-food contact surfaces. ECOLAB documents state that Peroxide Multi Surface Cleaner and Disinfectant is not appropriate for food contact surfaces.
Corrective Action: Obtain a food grade surface sanitizer for use on the food contact surfaces, such as a chlorine or QUATs based solution. A 200 ppm chlorine based sanitizing solution for food contact surfaces can be made by using a ratio of 1 unscented bleach : 250 water, or by adding 1 tsp unscented bleach to 4 cups of water.

Observation: Dried old mice droppings were observed along the floor corner in the area surrounding the chest freezers. No evidence of current pest activity observed. Old mice droppings should be cleaned and sanitized to facilitate the monitoring of new pest activity.
Corrective Action: Clean and sanitize the mice droppings. Take proper precaution by wearing gloves and a face mask, then spraying the mice droppings with a 1:10 bleach solution until wet and waiting for 5 minutes. Then use paper towel to wipe up the droppings instead of using the vacuum which can potentially aerosolize the droppings.
307 Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Wooden counter surfaces were present in the staff coffee area. This counter felt moist and tacky to the touch. Wood is not a suitable surface for areas where high amounts of moisture are involved.
Corrective Action: Have wood counter surfaces removed or resurfaced so that moisture is not absorbed.
