Observation: The temperature logs have not been updated since April. The long prep cooler in the center of the kitchen reads 17-20C in lower compartment. This is high even after lunch rush and cooler top being open during that time.
Corrective Action: Temperature logs should be maintained to avoid such instances where temps increase significantly. Kitchen staff moved perishable foods to another cooler during inspection and temperature started to decline down to 13-14°C by the end of inspection. Monitor this cooler and adjust as needed.
