Code Description
209 Food not protected from contamination [s. 12(a)]
Observation: Observed three trays of gravy left uncovered and open to contamination in walk-in fridge #2. The fan in walk-in fridge #2 had a build-up of dust and potential mold growth. A build up of dust and suspected mold was also observed on the ceiling of the kitch near the ceiling vents. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness. Build up on the fan can blow onto the food and surfaces in the walk-in unit, and built up on the ceiling may eventually fall into prepared foods.
Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff. Clean and sanitize the fan, ceiling, and walls of the walk-in cooler unit and the ceiling of the preparation area on a regular basis to prevent any build up of debris, dust, or mold.
301Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Can opener, knife block, and drawer space in the bakery table were observered to have food debris and residues. These are also areas that aren't marked for routine cleaning and sanitizing in the kitchen. Food debris and residues can facilitate the growth of harmful pathogen which may cross-contaminate with food when this equipment is used.
Corrective Action: Clean and sanitize the can opener, knife block, and drawer space regularly to prevent build up. Ensure that crevices and hard to reach areas are adequetely free of debris.
306 Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Several areas with food debris were observed. These areas include: cheese under the shelving of walk-in fridge #1, flour along the window ledge by the bakery table, crumbs and general food debris along the wall under multiple tables. Food debris can potentially attract pest such as rodents or insects which can carry disease and cross-contaminate with food. Walk-in freezer #2 and large chest freezer require defrosting. Built-up frost can inhibit proper sanitation and airflow of the unit. Kitchens which serve vulnerable populations hold an expectation of sanitation and maintenance to the highest standard.
Corrective Action: Ensure that the premise is throughly cleaned and sanitized to the highest standard of cleaniness.
