201Critical Food contaminated or unfit for human consumption [s. 13]
Observation: (CORRECTED DURING INSPECTION) Mouldy sliced bread was found in an open zip lock bag on the counter to be used for making bread crumbs. Unintentional mould growth on food is a sign of food spoilage and thus makes the contaminated item unfit for human consumption..
Corrective Action: Operator voluntarily discarded the mouldy sliced bread. Ensure that contaminated food items are not used, stored or offered for sale.
302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Operator has been using a sanitizing solution of 100 parts per million (ppm) chlorine for food contact surface sanitizing. Food contact surface sanitizer requires a higher concentration of chlorine to be effective. 2) Flour debris observed on the body of KitchenAid stand mixer. Left over food debris on equipment can cross contaminate with any food that is being processed.
Corrective Action: 1> Ensure that chlorine sanitizer is made at a concentration of 200 ppm chlorine. Update sanitiation plan to reflect this change. 2> Wash and sanitize the KitchenAid stand mixer. Ensure that all equipment is properly washed and sanitized to remove all food debris and residue.
