101 Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
Observation: Cardboard was found in the main walk-in cooler being used as a surface to rest pots and catch spills. The cardboard was visibly dirty with moisture stains. Cardboard and paper surfaces are not sufficiently sealed or durable to facilitate regular cleaning an sanitizing. These materials will absorb moisture and harbour and allow disease causing bacterial to grow.
Corrective Action: Remove cardboard from the walk-in cooler. Where cardboard was being used, increase your the sanitation frequency or use alternative material that is non-porous and easy to clean.
209 Repeat Food not protected from contamination [s. 12(a)]
Observation: Food in the walk-in cooler and the walk-in freezer were stored directly on the floor. The walk-in freeze was still packed from bottom to top. Storing food on the floor inhibits visibility of potentially unsanitary areas and exposes the food to any nearby floor moisture.
Corrective Action: Store food a minimum of 15 cm (6 inches) above the floor.
209 Repeat Food not protected from contamination [s. 12(a)]
Observation: Several items in the main walk-in cooler were stored uncovered and left open to contamination. These included pots of soup and sauces. Without a cover, food is left open to contamination from objects, people, pest, or chemicals which may cause serious illness.
Corrective Action: Ensure that food is stored covered.
