Observation: Foods were left uncovered and open to contamination in walk-in cooler. (Public Health significance) - Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
Corrective Action: Cover or otherwise protect all foods from airborne contaminants, drips from raw foods, and contact with objects and staff
302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: (CORRECTED DURING INSPECTION) Chlorine sanitizing solution in sanitizer bucket tested below 200 ppm. (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
Corrective Action: Ensure a sanitizing solution of at least 200 ppm is available. Prepare sanitizing solution with a mixing ratio of 1 teaspoon of household bleach for every litre of water. Change sanitizing solutions as required to always maintain an effective concentration. Wiping cloths must be stored in sanitizing solution when not in use.
311 Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Ceiling light fixtures in food preparation area missing covers. All lighting must be covered to prevent physical contamination of food with glass from accidental breakage.
Corrective Action: Install covers on lighting fixtures or shatterproof sleeves on tube lights.
