108 | Critical Improper Cleaning, Sanitizing of Equipment and Utensils Observation: (CORRECTED DURING INSPECTION) Inadequate sanitizing rinse solution. No sanitizer detected. (Public Health significance) - Automatic glass washers must provide a minimum concentration of 50 parts per million (ppm) chlorine as required to effectively sanitize glassware. Corrective Action: Immediately initiate hand sanitizing providing a 200 ppm soak for 2 minutes for all glassware before use. Have the glass washer repaired by a qualified technician or if capable manually load the glass washer with the approriate amount of sanitizer and monitor and log sanitizer concentration regularly so you know when the unit needs adjustment or repair. In addition please send photo of test strip at 50 ppm at the glass to verify that the glass washer is working. |
