108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The mechanical dishwasher was unable to dispense any sanitzing solution.
Corrective Action: Manually sanitize the utensils and dishware until the mechanical dishwasher is fixed and it is dispensing atleast 50ppm of the chlorine sanitizer. Educated the operator on how to prepare a solution of sanitizer at the correct concentration and provided test strips.
110 Food Not Protected - General
Observation: A lid of a pest proof container holding flour in the rear storage area was broken and could not be properly sealed.
Corrective Action: Ensure that the lid is fixed or the container replaced to ensure a tight seal around the food to prevent the entry of any pests.

Observation: A drain in the main kitchen area lacked a drain cover.
Corrective Action: Install a tightly fitting drain cover to prevent the entry of pests into the establishment.
