Observation: - Foods being cooled in walk-in cooler in large stainless steel bins. - Food was seen left in deli slicer at room temperature.
Corrective Action: - Ensure foods are cooled from 60°c-20°c in 2 hours, 20°c-4°c in 4 hours. - Once foods have been used to prepare a dish, ensure either to return remaining foods items back into containers and cooled or discard.
110 Food Not Protected - General
Observation: Food was seen in walk-in cooler uncovered.
Corrective Action: - Ensure food is protected from contamination by sealing in appropriate containers.
