Observation: a)There was flour observed on the dough mixer down stairs. b)Flooring in the prep kitchen downstairs was observed to be chipped and cracked in places.
Corrective Action: a)Ensure the equipment is cleaned after each use. b)Repair / replace the flooring so that it is smooth, non- absorbent and cleanable.
