Observation: Two large pasta dishes were observed cooling in the kitchen. Reportedly after 3 hours the temperature was measured at 33°C.
Corrective Action: Ensure that potentially hazardous food is cooled from 60°C to 20°C in the first 2 hours and then from 20°C to 4°C in the next 4 hours.

Observation: Food was observed stored on the floor.
Corrective Action: Ensure that all food is stored on shelves 6 inches off the floor.
116 Improper Construction / Maintenance of Establishment
Observation: 1)Carboard was observed being used as shelf liners. 2)Counters and the work table in the prep kitchen were observed to be worn and chipped.
Corrective Action: 1)Remove all cardboard from the premise after unpacking the boxes. 2)Repair/refinish all surfaces so that they are smooth, non absorbent and cleanable.
