Observation: -Front preparation cooler especially seafood and meat coolers temperatures are 8-10C, they must be 4C or below -Milk cooler temperature is at 7C
Corrective Action: Adjust to 4C or below immediately

Observation: dishwasher sanitizer concentration is at 0ppm chlorine residual.
Corrective Action: It must be 50-100ppm, dishwasher must be repaired. In the mean time, use dishwasher for washing and rinsing, then air dry them. Recheck concentration by thend of inspection, 100ppm.
