Observation: Frozen shrimps/prawns are observed to be defrosted in cold still water. - Suspected food home illness regarding cantonese pork eaten from restaurant. - Went through cantonese pork preparation procedure with operator: pork defrosted in cooler or cold running water: cut into pieces; mix with flour; deep fried immediately until fully cooked; cool down; put into cooler for later use. Reheat again to order by deep frying, mix with sauce and serve.
Corrective Action: Frozen shrimps/prawns must be defrosted in cold running water. Recommendations: 1) Make sure to defrost pork in cooler at 4C or cold running water with wrap completely sealed. 2) Reduce the cut and preparation time as much as possible to prevent temperature abuse of the pork. Deep fry immediately after mix with flour. 3) Monitor internal temperature by using probe thermometer to measure internal temperature. It must reach 74C or above. 4) Make sure cooling procedure standard has been met and temperature being monitored. Internal temperature must be cooled from 60-20C within 2 hrs. 20C- 4C within 4 hrs. 5) Make sure reheat/second deep frying of the pork reach internal temperature of 74C or above. Probe thermometer should be used again for temperature monitoring.
