Observation: - Garnish insert temperature at 8C; insert was kept opened at lunch period.
Corrective Action: - Keep cover of insert closed at all times when it is not in use. - Recommend to lower the temperature of cooler underneath to 2-3C so as to keep the insert temperature at 4C. - Maintain temperature monitoring of food stored in inserts.
