Observation: Two boxes of whole eggs stored in room temperature. Termpature checked at 11C. Just arrived according to operator.
Corrective Action: Put into cooler immediately.
108Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Mixing detergent and bleach for washing glasses which is an improper washing procedure.
Corrective Action: Glasses and all dishes need to be cleaned through procedure such as washing with detergent, rinsing with hot water and sanitizing with 100ppm bleach solution.
110 Repeat Food Not Protected - General
Observation: Drinks exposed to the air without cover for longer period of time. Ice build-up in walk-in freezer in basement storage area. Possible contamination of food when ice dripped into food storage.
Corrective Action: It needs to be cleaned.
113 Improper Sanitary Facilities
Observation: No hand soap and paper towel in staff washroom. No paper towel available at hand sink at front drink prep area. Bleach solution with 1oz of bleach per 1 gallon of water (100ppm) must be avilable during operation to sanitize dirty rags and food contact surfaces.

Observation: Holes on wall at basement storage area, possible harbourage of pests.

Observation: Missing tiles at basement storage area.
Corrective Action: All surfaces in food service establishment has to be smooth, non-abosrbent, easily cleanable.

Observation: Food build-up at the side and on floor at stove srea. Food spilled on floor and pallets at basement storage area; possible attracting pests. All food in coolers, freezer and dry storage has to be stored at least 6" off the floor to be protected from contamination.
