Observation: 1. Raw meat on top of salad in fridge. 2. Bucket of soup on floor uncovered, cooling appropriately but chance of contamination.
Corrective Action: 1. Keep separate or put raw meat on bottom. 2. Correct as indicated.
110 Food Not Protected - General
Observation: Be sure to cover all foods in all coolers, fridges & freezer.
Corrective Action: As indicated.
116 Improper Construction / Maintenance of Establishment
Observation: 1. Keep food utensils out of handwashing sink. 2. Thermometer for walk-in freezer reading below temperature but checked temperature & it was fine. 3. Debis on floor - busy time.
Corrective Action: 1. & 2. Correct as indicated. 3. Clean at reqular intervals, even during busy times, in freezer, cooler & work floor.
