302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: (CORRECTED DURING INSPECTION) No sanitizing solution was made up for employees to use during time of inspection. Access to proper sanitizing solution is necessary for proper disinfection of food contact surfaces during operation.
Corrective Action: Operator made up a chlorine sanitizing solution (200 ppm) at time of inspection, and was instructed to keep it readily available to staff so food contact surfaces can be sanitized throughout the day. Ensuring the solution is changed out approximately every 2 hours.
311 Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: All lights in kitchen area are missing covers. Covers over lights protect the food and food preparation area from physical contamination if the light were to shatter.
Corrective Action: Replace covers over all lights or install shatter proof light sleeves.
312 Items not required for food premises operation being stored on the premises [s. 18]
Observation: Food items for personal use are stored in the food prep area and in the same walk in cooler as foods used for restaurant. This poses a risk for cross contamination.
Corrective Action: Ensure all foods for personal use are stored in a separate area or cooler than those used for operation of food premises.
