Observation: Cover salads in walk-in most items are covered. Two salads without.
Corrective Action: Discard noodles in pasta fridge. Packages are open and salad bowels are stored on top. Clean out area and ensure only pasta stored in pasta bin.
107Critical Inadequate Cooking and Reheating of Potentially Hazardous Food(s)
Observation: Dishwasher rinse temperature gauge not working properly.
Corrective Action: Have unit checked and ensure temperature of 82°C is achieved. . If not achieving 82°C, use a spray bottle of 200pppm (1 teaspoon) bleach water solution to sanitize dishware.

Observation: Cutting boards in prep area sanitized once daily.
Corrective Action: Boards need to be cleaned and sanitized more frequently, about every 2 hours.
