302Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: (CORRECTED DURING INSPECTION) No active sanitizer detected in sanitizer spray bottle. Sanitizing solution must be strong enough to destroy bacteria on surfaces. Bleach based surface sanitizing solution should be changed frequently to maintain a concentration of 200ppm active chlorine (Spray bottle should be changed on daily basis, Sanitizer bucket should be changed every 4 hours or whenever visibly dirty.).
Corrective Action: The operator discarded the old solution and made a new solution by mixing 1/2 tsp bleach with 500ml water. The new solution measured at 100ppm which indicates that the bleach may be expired. Operator should obtain new bottle of bleach and must ensure that the sanitizing solution used during operations is maintained at an effective concentration of 200ppm active chlorine. It is recommended to purchase chlorine test strips in order to accurately monitor the concentration of the sanitizing solution.
