Code Description
209 Food not protected from contamination [s. 12(a)]
Observation: (CORRECTED DURING INSPECTION) Various implements used a scoops are left in product for ongoing use including ingredient bins, ice machines, ready to eat product. (Public Health Significance) Improper scoops and scoop storage exposes items to bare hand contact and potential contamination.
Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.
314 Operator has not provided acceptable written sanitation procedures [s. 24]
Observation: Bleach spray sanitizer used did not test at the correct range for concentration at time of inspection. Operator was able to demonstrate proper preparation of the bleach sanitizer with a passing test strip at time of inspection; however the operator has no record of preparing or testing sanitizer on a routine basis thus operator has not provided acceptable written sanitation procedures. This would provide information that sanitizers used for food contact surfaces in the kitchen is up to date and ready for use on a daily basis ensuring public health and safety in this regard.
Corrective Action: Use a sanitizer log provided to record activities in regards to sanitizer preparation and testing. Have these records available on site to an Environmental Health Officer for review by the next routine inspection.
